The oil emanates a rich aroma of unripe tomato and freshly cut grass. It has a yellow-green colour and a delicate, well-rounded flavour with medium spicy and bitterness.

“Satin” is produced from 100% Chardonnay grapes and it is harvested later than the normal grape harvest, to give it more body and a more complex structure. It has an intense yellow colour, and an elegant and buttery nose. In the mouth it is an explosion of citrus flavours and white fruits. 

SAFFRON RISOTTO WITH BONE MARROW AND BABY CALAMARI

Medium fruity, smell of fresh hay, artichoke and banana. Initially tastes sweet, followed by a harmonious bitter and spicy taste of medium intensity, persistence rich in vegetable notes with predominance of artichoke.

It has an intense gold colour, with yellow flower, citrus and orange zest aromas at the nose. The mouth offers hints of tropical fruits such as pineapple and lime alongside chamomile and fresh herbs.

It is made from 100% Nebbiolo grapes. It has a light ruby colour with purple rim. At the nose, you get hints of red fruits and elegant notes of sweet spices like cinnamon and nutmeg. At the palate, it is smooth, feminine with soft tannins and well balanced acidity and minerality.

 

CHESTNUT AND TONKA BEANS LAVA CAKE, POMEGRANATE SORBET

wine pairing: Vin Santo Colli dell’ Etruria Centrale DOC | Buccianera | 2016 | Toscana
Dark amber colour, with an intense and complex nose. Hints of dried fruits such as chestnut and hazelnuts, plus sweet apples and apricot. It finishes with round aromas of  fig, raisins and honey. The mouth is very soft and dense, the sensations of sweetness are well balanced by acidity.
