To celebrate World Vermouth Day and the whole of Vermouth Month, we are launching a dedicated vermouth menu curated by our sommelier Fabio De Nicola — a love letter to one of Italy's most misunderstood and magnificent traditions.

WHAT IS VERMOUTH?
Italy's Most Storied Drink
Vermouth is a fortified, aromatised wine — one of Italy's oldest and most storied drinks. Born in the hills of Piedmont in the 18th century, it takes its name from the German 'Wermut' (wormwood), one of the many botanicals used in its production.
Bitter herbs, sweet spices, citrus peel, roots and flowers — each producer keeps their own secret formula, handed down through generations. At its heart, vermouth is a drink of the aperitivo hour: the golden Italian ritual of slowing down before a meal, of conversation, of anticipation.
It is deeply connected to who we are at Baccalà — the belief that dining is not just about what is on the plate, but about the entire experience. Today, vermouth is experiencing a remarkable renaissance, driven by the Negroni boom and the rise of vermouth and tonic as the new G&T.

Rosso
SWEET RED · THE APERITIVO CLASSIC
Rich with vanilla, dried fruit and bittersweet herbs. Born in Piedmont, the heart of the Negroni and the foundation of Italian vermouth culture.
Bianco
SWEET WHITE · FLORAL AND GENTLE
Delicately floral, with notes of vanilla and elderflower. Beautiful over ice with a strip of lemon — the quieter, more elegant sibling.
Secco
DRY WHITE · HERBAL AND CRISP
Crisp, herbal, with a long dry finish. The martini's companion, and a sophisticated aperitivo on its own.

Why Vermouth & Baccalà Are Made for Each Other
You will already find vermouth at the heart of many drinks on our menu — in our classic Negroni, our White Negroni, the Sbagliato, the Americano, and our seasonal Pomegroni. But for Vermouth Month, we are putting it centre stage.
Vermouth's botanical complexity — its bitterness, its sweetness, its herbal notes — makes it a natural companion to Italian seafood. Just as a squeeze of lemon lifts a piece of fresh fish, vermouth brings life and depth to the aperitivo moment that opens every great meal at Baccalà.
Our vermouth menu is served alongside small bites designed to echo those flavours: crostone with baccalà mantecato, toasted bread with chicory and bottarga, and freshly shucked oysters from our daily selection.

Our sommelier Fabio De Nicola has built a menu that takes you through Italian vermouth's full spectrum — from the bittersweet rosso of Torino to rare small-producer biancos you won't find elsewhere in London.

Every glass is designed to open a meal. Chef Moreno's small bites — from oysters to baccalà mantecato on crostone — are chosen to complement the botanicals in each pour.
